Can you eat a gar fish?

The flesh of the alligator gar is white and firm with a mild taste, comparable to the flesh of many sport fishes that anglers eat. Commercial fisheries exist for the alligator gar in some southern states — a testament to its use as table fare.
The only time alligator gar pose danger to people is when anglers try to land and handle these large, powerful fish. In addition to hosting a mouthful of sharp teeth, alligator gar are also covered with sharp, bony scales. If anglers are not careful, they can easily get cut or bruised.
Where are gar fish found?
Gars are currently found within and outside of their native ranges in the United States from the Great Lakes basin in the north, south through the Mississippi River drainage to Texas, Mexico, and Florida. Florida gars are only found in Florida and Georgia.
Are gars aggressive?
Although they may look ferocious, alligator gars pose no threat to humans and there are no known attacks on people. They can pose a passive danger, though: The fish’s eggs are poisonous to humans if ingested.

What is the best bait to catch a gar?
Carp and Buffalo are the main bait of choice for the gar but occasionally we will use freshwater drum. Carp are hands down the best bait for alligator gar, but they must be kept fresh. Anglers should treat bait used to catch alligator gar just like they were going to eat it.
Targeting gar is pretty easy. Cast your fly a few feet beyond and a few feet in front of the fish. A gar generally won’t move until the fly has gone past, and then there is a real burst of speed and the fish grabs the fly. This is a critical moment fishing gar because, if you set the hook, you won’t get your fish.
